Lalvin - Champagne Yeast EC-1118
Champagne Lalvin EC-1118 yeast is a champagne type wine yeast. This yeast provides vigorous and rapid fermentation of red and white wines as well as ciders, sparkling wines and "in-bottle" secondary fermentations. It is a yeast very resistant to osmotic pressure. Lalvin EC-1118 yeast is very competitive and its "killer yeast" factor will inhibit the development of wild yeasts. It can restart blocked fermentations due to its good tolerance to alcohol and sulphites. EC-1118 yeast is also a very neutral strain that will have very little effect on the final taste of the product. This is a popular strain that ferments fully and flocculates well producing compact lees. It is very popular for refermentation of bottled beers. Its low attenuation prevents it from consuming more complex sugars.
