LalBrew® LoNa™ is the first maltose-negative strain of Saccharomyces cerevisiae specifically developed using hybridization for brewing low-alcohol and non-alcoholic beers (reduced wort aromas, POF negative, and H2S negative). Advanced classical and non-GMO selection methods have been used to select a strain that does not consume maltose and maltotriose, resulting in very low attenuation. As a strain of S. cerevisiae,LalBrew® LoNa™ behaves like an ale yeast, producing a clean and neutral aromatic profile, without phenolic flavors, and significantly reducing the aldehydes that cause wort aromas. Additionally, the patented technology from the University of California Davis (USA) ensures that the strain will not produce off-sulfury flavors, allowing the malt and hop aromas to shine through.
Pasteurization is necessary with LalBrew.® LoNa™ to prevent re-fermentation after packaging and ensure the stability of the beer.
