How did we do this? Two aromatic strains of yeast were crossed to improve flocculation and ester production through a phenomenon known as "hybrid vigor." Can be fermented hot or allowing the temperature to rise gradually, improving pineapple ester production. Also suitable for fermenting sour beers.
