Kolnasāta yeast comes from a traditional Latvian brewer named Dainis Rakstiņš from Bērzpils region. Despite its name, it is neither a Kölsch strain nor a Pilsner strain. Kolnasāta offers large doses of pineapple esters with medium attenuation and flocculation. This strain is POF- (non-phenolic) which means it can be used in a wide range of beers. The traditional beer it ferments is made by heating the mash using hot stones!

Remarks:
- This is not a kveik yeast, but rather a farm strain from continental Europe.
- Escarpment Labs obtained permission to offer this strain from the brewer, who requested that anyone selling the yeast call it by the name Kolnasāta.
- The complete genome sequencing of this strain has been carried out. Genetically, it is part of a group of other continental European farm strains and is different from the kveik.
- This strain is STA1- but shows growth on LCSM Agar indicating that it is resistant to copper sulphate.
