WildBrew Philly Sour™ is a unique species of Lachancea selected from the environment by the University of the Sciences in Philadelphia (Patent No. PCT/US2018/043 148). During fermentation, WildBrew Philly Sour™ produces a moderate amount of lactic acid in addition to alcohol. The first yeast in the WildBrew™ range, Philly Sour™ is an excellent choice for creating innovative and light beers with a nice acidity and stone fruit notes. With its high attenuation and flocculation, as well as its good foam retention, WildBrew™ Philly Sour is the ideal yeast for styles such as Berliner Weiss, Gose, American Lambic, and American Wild Ales. Additionally, its resistance to hops makes it suitable for Sour IPAs.Strain: Lachancea spp.
